Strawberry Coulis

Strawberry Coulis is a slightly thick sauce made from fresh or frozen strawberries; It is widely used in cakes or ice creams to enhance flavor and color.
It can be prepared from vegetables , fruits or mixture of fruits. Such as, the red fruit coulis where strawberries, blueberries and raspberries are mixed.
The term Coulis is a french word pronounced /culi/ derived from the french verb couler , which means ” to Run” referring to a liquid.

¿How to prepare fruit coulis?
For the preparation you will need fresh or frozen fruits, sugar, the juice of half a lemon and a little water.
Place all the ingredients in a pot at low heat for a few minutes. until the fruits become soft and begins to fall apart.
Remove from the heat and with a stand mixer, crushed until obtaining a puree. Strain to have a smooth sauce.
Refrigerate and allow to cool completely. As the sauce cools it will thicken.
you can add some drops of vanilla or add a vanilla pod while you cook the fruit.
If you want a more rustic preparation with pieces of fruit, after crushing the fruit, do not pass the sauce through the strainer.

Ingredients
- 200 gr Fresh or frozen fruits
- 50 gr sugar
- Juice of ½ lemon
- ¼ cup water
Instructions
- Place all the ingredients in a pot at low-medium heat. cook until the fruit is very soft.
- Remove from the heat and with a stand mixer, crushed until obtaining a puree. Strain to have a smooth sauce.
- Refrigerate to cool completely. After cooling the sauce will thicken.
