Lettuce Boats with Salmon Teriyaki and Rice

  • 5 Baby Gem lettuces (small Heads) or the lettuce of your choice
  • 2 cups Basmati Rice 
  • 800 gr. Salmon fillets with skin
  • ½ cup Spring Onions finely sliced 
  • Parsley leaves (bunch)

Teriyaki Sauce Ingredients

  • ½ cup Agave syrup
  • ½ cup Soy sauce (gluten free)
  • 1 tbsp Fresh Ginger finely grated
  • 1 tbsp Garlic Paste
  • 2 tbsp Rice Vinegar


  • Preheat Oven 180degC.
  • Prepare the rice following the package instructions.
  • Wash and dry the Lettuce leaves. 
  • For the teriyaki sauce place the agave syrup, soy sauce, grated ginger and rice vinegar in a sauce pan and simmer a low heat around 5 minutes without lid and Reserve.
  • In a pan-fry add a little bit of oil and seal the salmon fillets, start on the skin side, when the color of the salmon start to change (to cook) flip on the other side (don’t fully cook, the inner part of the salmon must still undercook). Remove from the stove.
  • Place the salmon in the oven proof dish skin down, add a little bit of the teriyaki sauce on top of the salmon. cover with aluminium foil. Finish cooking the fish in the oven. Cook for another 2 - 5 minutes. Don’t overcook.
  • To serve fill the lettuce with Rice, salmon add more teriyaki sauce, few spring onions and parsley leaves as topping.  Enjoy  


Rice and Teriyaki sauce can be prepared in advance so you  can go straight to prepare the salmon before to eat in just 15 minutes. 
If you desire to cook the salmon only in the oven, place directly the salmon fillets in an oven-proof dish, cook for 8 minutes, pre-heated oven 180degC. After that, remove from the oven, add part of the teriyaki sauce on top of the salmon.  cover with aluminium foil. cook  again in the oven during 5 minutes to get a soft and flaky salmon. (check that the the salmon is cook). 
Cooking time could be adjusted according with the size of the fillet.
